These carefully selected eels are brought to our facility live. During the receiving stage, the fish undergo rigorous checks and a detailed examination to ensure compliance with hygiene and quality standards. After the receiving process, the eels are rested for several days in special pools in purified water. This process is carefully implemented to enhance the quality and flavor of the fish. After the resting period, the processing stage begins, and the fish is carefully prepared to preserve its flavor and nutritional value. Thanks to this meticulous production process, Unagi/Kabayaki is offered to your tables with its natural goodness and superior quality.
