2. Resting and Cleaning: The eels, considered alive, are rested in special pools of purified water for several days. This stage helps remove impurities from the fish and improves meat quality. Following the resting process, the fish are carefully cleaned and filleted.
3. Salting: Cleaned fish fillets are salted for a specific period. This salting process enhances the fish's flavor and ensures longer shelf life.
4. Smoking: Salted eels acquire their distinctive flavor by being smoked in natural wood smoke for a specific period of time. The smoking process maintains a controlled temperature and smoke intensity, preserving the product's natural aroma and consistency. This process imparts a rich flavor that penetrates deeply into the fish's flesh.
5. Packaging and Storage: Once the smoked eels are packaged under hygienic conditions, they are stored under cold chain conditions to maintain food safety and freshness, making them ready for customer service.
